Buffalo Chicken Rice Bowls
An easy meal prep recipe to get a good amount of veggies, all hidden by buffalo sauce.
Ingredients

3 cups of dry white rice (I prefer jasmine)
4 lbs of chicken thighs. Thawed
1 tsp olive oil or other neutral oil
4 tsp salt
2 tsp pepper
2 tbsp chili powder
1 tbps garlic powder
1 medium onion
4 normal size zucchinis (2 oversized ones)
1 lbs mushrooms (promise you can hardly taste them)
1 cup cheddar cheese
3/4 cup franks red hot
